Feta Cheese

Feta Toast

Serves 2

4 slices of whole wheat or multigrain bread toasted

½ cup soft Greek feta cheese

2 small tomatoes, thinly sliced

1 avocado, thinly sliced

¼ cup pomegranate ariels

2 tbsp. pepitas

2 tbsp. flaxseed sprouts (optional)

4 lemon (or lime) wedges

 

Method:

Prepare your toast according to your liking. Once done, transfer the slices to serving plates. Spread each slice of toast with feta cheese. Top with the slices of tomato and avocado, then sprinkle over the pomegranate ariels, pepitas, and flaxseed sprouts, if using. Serve immediately with a lemon or lime wedge to squeeze over the top.
