Ingredients
4 slices of whole grain bread toasted | ½ cup soft Greek feta cheese | 2 small tomatoes, thinly sliced | 1 avocado, thinly sliced | ¼ cup pomegranate ariels | 2 tbsp. pepitas | 2 tbsp. flaxseed sprouts (optional) | 4 lemon (or lime) wedges
Preparation
1. Prepare your toast according to your liking. | 2. Once done, transfer the slices to serving plates. | 3. Spread each slice of toast with feta cheese. | 4. Top with the slices of tomato and avocado, then sprinkle over the pomegranate ariels, pepitas, and flaxseed sprouts, if using. | 5. Serve immediately with a lemon or lime wedge to squeeze over the top.
