Ingredients

4 handfuls baby arugula leaves | Parmesan shavings | 8 sundried tomato halves, julienned (cut in strips) | 1 lemon | Extra virgin olive oil

Preparation

1. Place arugula on plate. | 2. Top with parmesan shavings and sundried tomato strips. | 3. Squeeze fresh lemon juice over the top and drizzle with olive oil. | 4. Season with salt and pepper.
