Turkey, Wild Rice & White Bean Soup

Ingredients
2 Tablespoons extra virgin olive oil | ½ cup water | 1 large onion, finely diced | 3 medium carrots, finely diced | 4 celery stalks, finely diced | 1 pound ground turkey | ¾ cups dry white wine | 8 cups low sodium chicken stock | 1 teaspoon Kosher salt | ¾ teaspoon ground pepper | ½ cup wild rice or mixed wild rice | 1 Tablespoon rosemary, finely chopped | 1 Tablespoon thyme, finely chopped | 1 Tablespoon sage, finely chopped | 3 Tablespoons low sodium soy sauce | ½ teaspoon cayenne | ½ teaspoon garlic powder | 2 cans Great Northern beans, well rinsed
Preparation
1. Heat the olive oil and water in a large pot. | 2. Add onions, carrots, and celery and cover and simmer on low heat until the vegetables are soft, about 30 minutes. | 3. Add ground turkey and cook on medium heat until cooked through. | 4. Add the wine and cook until liquid has evaporated. | 5. Add stock, salt, pepper, rice, rosemary, thyme, and sage. Bring to a boil. | 6. Add soy sauce, cayenne, and garlic powder and simmer for 20-30 minutes, until rice is tender. | 7. Add beans and warm until beans are hot, about 10 minutes. | 8. Serve and enjoy!
