Turkey and Zucchini Burgers with 
Lemon Garlic Aioli

These burgers make a great party dish or weeknight supper.   Make them slider sized for a party or bigger for a burger in a whole wheat pita for supper.  The zucchini keeps them really moist and adds an extra vegetable to your plate!!

 

Serves 4-6

 

Burger

1 pound lean ground turkey or ground chicken

2 cups coarsely grated zucchini, skin on (1 large zucchini…use the largest opening on a box grater or on your food processor.)

4 scallions, thinly sliced

1 egg

2 Tablespoons chopped fresh mint

1 Tablespoon chopped fresh basil

2 Tablespoons chopped fresh cilantro

2 garlic cloves, finely grated

1 teaspoon ground cumin

salt and pepper to taste

olive oil for searing

 

Lemon Garlic “Aioli”

1 cup fat free Greek yoghurt

1 teaspoon finely grated lemon zest

1 Tablespoon freshly squeezed lemon juice

1 garlic clove, finely grated

1 ½ Tablespoon olive oil

salt and pepper to taste

 

METHOD

Burger

Preheat oven to 400F.

Combine all the burger ingredients except the oil in a large bowl.

Mix it all together with your clean hands!

Form into 16 slider sized patties or 6 larger patties.

Brown both sides of the patties in a frying pan with olive oil.

Transfer to a baking sheet.

Bake sliders in oven to finish for 10 minutes.  (Full sized burgers will take 20 minutes or so.)

 

Sauce

Combine all ingredients in a bowl and refrigerate until ready to serve.
