Greek-style Red Potatoes

Ingredients

1 ½ pounds quartered red potatoes | ½ cup extra virgin olive oil | ¼ cup fresh squeezed lemon juice | Salt and pepper | 1 ½ Tablespoons minced garlic | 2 Tablespoons finely chopped rosemary

Preparation

1. Mix potatoes, olive oil, lemon juice and salt and pepper in a large bowl. | 2. Roast on a baking sheet at 400°F for 40 minutes. | 3. Add garlic and rosemary. Toss well. | 4. Roast for an additional 10 minutes.
